Preheat the oven to 210°C (410°F) and line a baking sheet with parchment paper.

Peel the sweet potatoes, then cut them into slices about half a centimetre thick. Place them in a small bowl with olive oil, salt, pepper, and Espelette pepper. Mix well to ensure all the slices are evenly coated with oil.

Arrange the sweet potato slices on the baking sheet without overlapping them, and bake for 15 minutes. Flip them halfway through baking.
04 –
Meanwhile, cut the feta cheese into small cubes and the Bayonne Ham into strips.
05 –
Once the sweet potato slices are cooked, allow them to cool, then top each one with the prepared garnish.
